The Souk
A Souk is a market that is set up with similar products sold in distinct sections. I have shopped in the souks of Turkey, Egypt, India and Morocco. They are made up of small and large shops, with nearby cafes and food stalls. Music is everywhere and the scent of herbs, spices and perfume fills the air. This photo was taken in Marrakesh, Morocco. It includes medical and culinary uses, history and origin, English and Arabic names, recipes and a great bibliography. Many of the herbs and spices mentioned in the book are familiar, such as: garlic, ginger, thyme and turmeric. But the ways they are used is quite different from what we are accustomed to in "western" culture. One plant we rarely consider a remedy is coffee, but in this book, they write about how to use it medicinally. And there are some interesting new plants, such as: tarthuth "Maltese mushrooms", sidr (leaves from a tree), sarcocol a type of resin, and Mahaleb cherry. Hmmm I wonder where I'm going to buy them?
